I’ve successfully made soup and I want to do it again. :) It was a vegetarian soup and it tasted quite good! It was made from ‘stuff’ that I had around.
Put some olive oil in the bottom of a big pot and turn on the stove. Slice a couple onions and a couple cloves of garlic, and put them in the pot. Saute for a few minutes, until they are nearly cooked. Add whatever other vegetables you feel like – carrots and potatoes are what I used, and a bit more olive oil. Cook them a few more minutes, just to soften the vegetables. Then add liquid - I used vegetable broth and a little tomato sauce; enough to cover the hard ingredients. Turn up the heat, stir it around, cover the pot until it boils. Once it boils turn down the heat. Add whatever spices you feel like – basil, oregano, bay leaves, pepper, etc., and simmer for a good 20-30 minutes. Tasty.
